| Food/Dining/Wine One Barrel: Looking forward I've gotten a number of inquiries lately asking about how the One Barrel project is coming along. It has been two months (zut alors!) since last I got to a One Barrel post, and what had been intended as the next post has been sitting in the oven on "Warm" for over a month. Hence kind of dried out. So just to quickly bring everyone up to speed ... Amsterdam comfort food warms the soul One of my favorite Dutch comfort dishes is stampott, a mash of potatoes and another vegetable. It's easy to eat when you're cold and tired, and works well with variations. Apple Streusal Pie You can make the streusel and dough a day or two ahead; wrap well and refrigerate. Serve with softened vanilla ice cream, if desired. A fresh take on Mexican flavors A new Mexican cooking show? Now that's something you don't see on TV every day. Tostitos corn chips make the Hall of Fame Taking a corn chip and packing it with extra grains may seem like overkill, especially when corn itself is a whole grain. Umami defies definition Umami is one of those great Japanese words heavy with nuance and subtlety, where much of its meaning is lost in English translation.
